Breakfast: Loved yesterday's breakfast so much I had the same again: toasted plain bagel spread with sunlite and topped with the best vegan bacon. Americano with a teaspoon demerara sugar. There really is something about the smell of vegan bacon frying and freshly brewed coffee in the morning :-)

Lunch: Had a few slices of Redwood Foods ham style slices to use so made a small sandwich with those, cheezly mozza, Plamil organic mayo, dijon and lettuce. It was made with only 1 slice of bread, so half a sandwich only but it was a large slice of bread.

Afternoon Snack: Americano with a teaspoon demerara sugar and a bag of Choices Chocolate Orange Buttons - all gone now :-(

Later on, in keeping with my quest to try a new cocktail everyday ;-) I made a "Lemon Drop Martini" - my favourite yet, this was gorgeous!! Just vodka, cointreau, caster sugar and fresh lemon juice. Can't believe I've never heard of it, it claims to be a west coast thing and I'm from the west coast and love anything lemon :-/  Click on the link there for the recipe!

Will make this again for sure, in fact I did right after the first one ;-) I should note that although this pic looks like it was a stunning day here in Cork, it hailed shortly after I took this. Typical. I'm getting used to Irish weather and am officially bored by rainbows.

Also, if I have this right before dinner does that make it an "aperitif"? I don't know but that's what I'm calling it as it sounds right posh!

Dinner: Taifun Pizza Tofu Fillet lightly fried in olive oil with asparagus and couscous cooked in stock. Nice and easy :-)

Made too much couscous as usual....oh well :-)

Evening Snack: Well, Barcelona were playing Chelsea and as me and the boy are Barca fans this called for some snacks. I made up my Garlic Mushroom Pate earlier in the day so had some spread on crackers and a glass of white wine. (the pate is next in line to be blogged!) But gutted they lost! At least the snack was good :-)
