Breakfast: Toasted plain bagel spread with Sunlite and topped with my new favourite vegan bacon - beautiful!! An Americano with a teaspoon demerara sugar.

Lunch: Had the same roll as last nights eveing snack: french bread roll with Plamil Organic Mayo, Dijon mustard, Redwood Foods Ham Style Slices and Cheezly mozza and lettuce.

* I know I've been very heavy on the faux meats / ready made stuff lately, I go through phases with it and I'm the only one in the house who eats this stuff so basically once I've opened a package I've got to go through the whole thing before it goes off! *

Before lunch the weather looked like this, was incredibly stormy with hail and real strong winds. This of course meant I HAD to bake some bread :-)


I was watching The Hairy Bikers show the other day when they were in Germany and they made this potato bread which looked SO good so today was as good as any to try it.

Potato Bread

Looked fantastic and tasted great BUT I think my yeast was a little dodgy as nothing much happened in the first rise. Didn't seem to affect the end product though. Great taste, lovely moist yet dense texture (might be denser than it should be due to possible yeast failure) but still a winner. I will try again with new yeast for sure :-)


So.... I did of course have a couple slices fresh from the oven spread with Sunlite spread ;-)

Afternoon Snack: Americano with a teaspoon demerara sugar and a bag of Choices Chocolate Orange buttons.

Just before dinner I just had to try an espresso martini. I've heard of them and as I love both espresso and kahlua figured I would like it and I absolutely loved it!

 Recipe is taken straight from the Kahlua website but is just kahlua, vodka and espresso, I put powdered chocolate on the rim there as it was calling out for it :-)

Dinner: Creamy Garlic Tagliatelle with tenderstem broccoli - yum! I have GOT to blog this sauce!!!

Vegan Creamy Garlic Pasta

I was thinking some Fry's Chicken Style Pieces fried up would be a lovely addition here but I've been going overboard with the faux meats lately so just kept it simple. Have so far made this sauce with shells, macaroni and now tagliatelle - all good!!

Evening Snack: Had a couple more slices of the potato bread and a raspberry soy yogurt.
