Lunch: Had Easter dinner leftovers again with a side salad, blog post is ready to go now!

Afternoon Snack: Cup of black coffee with a teaspoon demerara sugar and some of my Choices Vegan Chocolate Egg
Dinner: An old favourite - soy mince burrito. We used to have these often for a quick and easy dinner but I haven't been buying cheezly or tofutti sour cream lately (wanted to lay off it all for awhile) but got some the other day. It's always good, I mean it's a burrito, right??
I just fry some onion and garlic in a bit of oil, usually corn, until soft. Add frozen soy mince (my favourite is tesco's own label) and some frozen corn then a few teaspoons of Discovery Food's Fajita Seasoning Mix and some water and simmer until all cooked and the water is absorbed. Spoon down a warmed wheat tortilla and top with grated super melty mozza cheezly and tofuti sour cream. I don't usually add salsa as I add quite a bit of the seasoning mix so it's spicy enough.
Dessert was a a quick thing I made up as I had leftover pastry in the fridge - made up some little apple tarts by filling the pastry with a mixture of chunky bramley apple sauce mixed with a little more sugar and some cinnamon. Sprinkled some demerara sugar over top of the pastry and baked. Really easy and delicious apple tarts!
Evening Snack: I have a new favourite drink! The back of my bottle of Cointreau had this recipe: shot of cointreau over ice, squeeze of lime, fill with sparkling water and a slice of lime - I used a few slices of orange instead of a lime slice and it is so, so good! Had 2 of them with some Taifun basil tofu on olive crackers.
Total Calories for the Day: Yeah, I stopped counting after dinner ;-) Yikes, didn't eat very well today!!
