Breakfast: Bowl of Bite Size Shredded Wheat with a sprinkling of sultanas and fortified Rice Dream. Cup of black coffee with a teaspoon demerara sugar.

Lunch: Well, after discovering how to make the world's best vegan bacon yesterday, today's lunch was set in stone - a vegan clubhouse. These were and are easily my favourite sandwich and this version by far the best one I've made yet, I'm putting it down to that bacon.

I opted against the tradition of using 3 slices of toast here as I always find that too much but otherwise it's a spot on vegan version of the original. Yes, it's processed faux meat heavy but it's not something you have every day (although I easily could!)

Photo here not doing it justice, but it's good quality white bakery bread, toasted and spread with vegan butter, topped with lettuce, vegan chicken salad, vegan bacon, slices of tomato then a little sprinkling of smoked sea salt. Perfection. I also had a handful of grapes.

Vegan Clubhouse

Vegan Clubhouse Sandwich: 
2 slices white bread, preferably bakery style, not pre-sliced
20g Taifun smoked tofu, sliced wafer thin
30g Fry's chicken style pieces
1 tsp vegetable oil
1 Tbsp Plamil Organic Mayo
spring onion
vegan butter
tomato
lettuce
black pepper
smoked sea salt

Heat half the vegteable oil in a frying pan and add the chicken, fry gently until defrosted and cooked, about 5 - 8 minutes. Transfer to a bowl and set aside to cool slightly. Add the other half of oil and bring the pan to medium-high heat, add the smoked tofu slices and fry until golden brown on both sides - transfer to a paper towel lined plate to absorb any excess oil.

Finely chop the 'chicken' then place it in a bowl and add the mayo, some chopped spring onion and a few grinds of black pepper and stir well.

Toast the bread then spread with vegan butter on both sides. Top with the chicken salad, bacon, tomato slices, sprinkling of smoked sea salt, then the lettuce and the other slice of toast.

Afternoon Snack: Cup of black coffee with a teaspoon demerara sugar and a bag of Choices Chocolate Orange Buttons.

Dinner: On my own for dinner and feeling really lazy - beans on toast it was then :-) Although I did grill some cheezly mozza over top, does that count as "cooking"??

Evening Snack: Taifun are going to have to start paying me I'm so addicted to their stuff! The basil tofu on plain crackers and a couple of my new favourite drink again: Cointreau, lime juice, sparkling water and orange slice over ice :-)
